200ml newly squeezed lemon juice
500g granulated sugar

Instructions

To prepare the Syrup: Put all the items into a pot, heat until it reaches a light boil, agitating until the sugar dissolves. After that, take off the burner allowing it to reach room temperature entirely. Decant into an sterilised bottle, close it keeping it chilled, where it will keep for around one month.

For the Premix: Combine every liquids into one sizeable container, leave to sit for 60 minutes, then filter it best through muslin, to ensure it's perfectly clear.

To serve: Add 85ml from the batch mix to a mixing glass packed with ice, and stir gently for about 60 seconds to cool it down. Strain to a frosted cocktail glass or a similar vessel, top with some cranberries and finish using a light spray with the mandarin essence above the glass.
